Easy Homemade Blueberry Muffins

2 cups of gluten free flour, 2 tbsp baking powder, 1 tbsp of liquid coconut oil, 2 large eggs, 2 tbsp honey, 3/4 cup of almond milk, 1 and 1/2 cups blueberries, 125g coconut yogurt


In a bowl, mix the flour and baking powder. In another bowl whisk the egg whites, stir in the yogurt until smooth and add the honey.

Add half of the flour mixture, stir and then add the milk before adding the remainder of the flour mixture.

Gently press the remaining blueberries into the tops before transferring to the oven.Bake on 180 for 20-25 minutes. Allow to cool before removing from tray.
